Okay, it is not my goal to be offensive or unhelpful so here goes:
When you cook your eggs, or steak, or chicken, etc... Are you "killing" the protein? No. In fact you are making it better, by making it more bioavailable. Your stomach has to break down and process protein anyway, so cooking it first to break it down first actually makes it more bioavailable.
This is the same for whey. Cooking whey does not lessen is bioavailability, and it most certainly does not alter its nutritional content....
Sorry if I offend you

This has been discussed on the forum. I will try and find the link for you. I specifically said Whey Protein has this problem!
"Heating food to the point of cooking it actually has a profound affect on it. The method and degree that a food is heated
can change micro's and macro's. Note the phenomenal difference in caloric value of vegetables between cooked and raw,
even micro-nutrients are lost in the process. Now proteins and fats also undergo change. As Eidolon said, protein is lost in overcooking chicken and eggs, in actual
fact it spreads broader than just that. When you cook your meat and it's all "charcoally", I would say their remains little to
protein value is left in that piece. Of course you should still cook meat to make it digestible and easily absorbed. Micro-
nutrients are lost very quickly when you overcook food. (I f**king cringe when I hear people micro-waving whey and eggs
and calling it a protein muffin) As for fats, you should be counting oil used in cooking although it becomes very difficult to judge actual consumption
because some oil will get left in the pan(or what ever). You should also be counting the calories in your supplements
(Omgega's ect). I find it's easier to just cook with dry heat/ steaming and adding oils after if I need to get macro's right.
Also, oils loose flavour when cooked. As long as the oil doesn't smoke, count the calories and micro's. When it smokes it
becomes dangerous to your health as well. Hope the insight helps bra."

If you feel so strongly about this and I am so stupid, why did you not jump in at the time it was discussed??
I see I have some karma minused too. Damn you are sad whoever you are!
It would be nice if we can get to the bottom of this by having an intellectual debate?

I do not deny that cooking food has a profound effect. This is most notable in the cooking of fats where the saturated fat content increases. The loss of micronutrients from vegetables is mostly in reference to boiling, where they are leached out into the water. However cooking protein only serves to unfold or ‘denature’ the secondary and tertiary structures. There is no loss of any protein content (where would it go?) and there is no altering of chemical bonds – with the exception that the cystine bonds are reduced as part of the unfolding process. The unfolding of protein is actually necessary for proper digestion, as unfolding facilitates the exposure of cleavage sites within the protein for digestive enzymes which together with acid hydrolysis breaks up proteins into their usable individual amino acids.
Now, let me say the tertiary structure of a native protein does in fact affect bioavailability. For instance casein is amphipathic and so forms protective micelles which prevent access of digestive enzymes. This makes it a slow digesting protein. However in the case of whey, egg albumin, and most other proteins of nutritional relevance they are readily soluble. This means that whether they are native or not there is very little effect on bioavailability. In fact if anything denaturing them by cooking actually increases bioavailability by making them easier to digest. Again, I will reiterate, no protein is lost in this process – it cannot simply disappear!

This is a very different point. Overcooking food removes the last of the water and makes the food very hard to digest. Usually it is not and just passes on. On top of that burnt food contains several aromatic hydrocarbons which are very carcinogenic.
However, I hardly think 15-45 seconds in the microwave is over cooking…

I would hardly call such a debate intellectual – but as always I am happy to help educate you

I am a qualified practicing scientist who does not simply regurgitate shit I read on the internet as gospel, and I used to feature prominently on this forum. In fact I remember offering you some good advice when you first joined this forum quite some time ago… Unfortunately I no longer have the time to dedicate to this forum as I used to, and I also do not have internet access that I can legally use to post on this forum. I am sorry that I could not correct you thinking sooner, but I am glad I got this opportunity now.
As for karma, well I am sorry you lost some for your ignorance but do not blame me – Tapatalk forum app does not seem to allow this function on my phone.
I hope this helps you in your future culinary endeavours. Bodybuilding is already an incredibly draining sport and one not need waste their valuable time and energy on extravagant meals, or feel frustrated at being unable to satisfy momentary cravings, when there are such amazing discoveries as the “Protein Cookie”
My compliments to the OP

To end this off- I would be very happy if what you are saying is true cause I have a kick ass recipe for protein brownies I shit-canned a couple of months ago when I was told you can't microwave Whey Protein. It is a pity you didn't jump in the previous thread bro! I know you were a big part of this forum dude I have read lots of your old stuff.
Thanx for taking the time to share your knowledge. I didn't mean debate it with me I meant debate it with the forum member who take an interest in this topic. Why I said that is because we have a problem on the forum that everyone just tries to look cool and play for the crowd with "humorous" ??? comments instead if trying to have a constructive conversation on their difference of views. You can probably see this with the karma being minused and everyone else trying to be clever, over a topic as stupid as a protein cookie.
Have a smashing night my dude! Thanx again. Hope to see a lot more of you on the forum?

If I may ask- what is your field of expertise and what are you currently working on Mr Scientist?

All that writing for that? You whine like a bloody girl. And that's not trying to be humorous. I know nothing of this scientific stuff but just by reading the post it seems quite clear sumone was schooled on the matter. I know for a fact Inja is indeed a scientist as a previous board member whom I know and who also happens to be a scientist in cancer cell research knew him very well. The details aren't important. I wouldn't question Inja's advice for a second. But that's me. So in closing, if its just a stupid cookie thread stop whining about it.

MCJ you whine like a pro! Where did I question whether he is a scientist or not? By showing interest? And where did I question his advice? I think you should come back from that dream world bro!
