Quick question about nutritional value.
I have this iPad app. to determain Nutritional value of food items.
If i choose 1.5 cups of Cooked egg white it gives me these values
127 cals
0.41 fat
1.78 carb
26.54 Protein
if i choose 1.5 cups of raw egg white it gives this:
190 cals
0.62 fat
2.66 carbs
39.73 Protein
I believe the stiffness comes from the protein contracting in the food source while its cooking, this is why it goes white, i dont believe any protein should be lost in this process. can anyone confirm this?

Pikes wrote: It doesnt taste that bad, i have had 2 servings so far (1.5cups a serving). i spice it with some aromat and itallian herbs and then put it in the microwave for about 1.30mins, stir a bit and put it back in till its stiff. i also beat it a bit before the time with a tea spoon to get some "air" in. dont know if this helps with texture but it makes me look cool

Correct. Cooked is right overcooked and it loses its efficacy

both figures that the app gave me is correct. the reason for the loss is the following. 1 Cup of raw egg whites is not = to one cup of cooked egg white. The cooked white will be more like 1.5 cups after its cooked. Seems like this sloves the problem?
i have also read that because of "trypsin inhibitors" being incapacitated in the cooking process. it is in fact better to eat them cooked than raw. Anyone know more about that?

Safehouse wrote: Pikes why don't you just bomb the whites into a shake instead of cooking them? I find that egg whites enhance the flavour of the shake anyway.
Egg Whites uncooked are not digested properly and do not yield the same protein content as cooked whites.

So the figures posted from Pikes' iPad app are then incorrect. Just checked on Fitday, and it gives the same values of protein for cooked and raw (11g per 100g).
Not disagreeing with you BTW, but there's so much info out there that sometimes it's difficult to decide who to believe.

"Egg Protein : Raw Vs Cooked?
Alot of people ponder the same questions about eggs.
Is it safe to eat raw egg?
Do I get more protein value from raw egg?
Will I reap the benefits of eggs by eating them raw.
Well , theres only one answer; thats no , no and no. Thanks to popular movies such as Rocky , people have a notion that drinking raw eggs provides the maximum benefits of nutrients , which isn’t really the case at all. Let’s take an inside look and see why…
Egg protein is a great source of quality protein , studies even suggest egg protein can help prevent the negative effects of overtraining. The best way to consume egg protein is thru cooked egg whites , or egg white protein powders.
Myths & Truths Of Eating Raw Egg
Drinking raw eggs gives you more protein. This is false. (Not only will you get less protein by eating it raw , but you will develope a biotin deficiency.)
It is completely safe. This is false! Risk of getting salmonella are 99.9% more higher eating raw eggs than eating cooked eggs.
You get less cholestrol. You don’t , infact it contains the same ammount as long as you eat the yolk.To break things down. Eating raw eggs will only get you 30% - 40% of the protein while cooked delivers 90% of the protein. Which means one cooked egg you eat contains more protein than 2 raw eggs. You do the math.Another thing you should know is biotin. There’s a protein in egg whites called avidin that binds to biotin (a type of vitamin
So while egg protein is a quality source , the hyped benefits of eating it raw just don’t add up. It’s advised that you stick to cooking eggs before eating them. There is also tons of egg white protein powders available , which is very popular for body builders. In my opinion those are good as supplements , but of course if your an egg lover , just go eat some eggs."

Point being stick with normal or Omega 3 eggs if you can get them, I force down almost 1.5 dozen a day.

Koe007 is right. It's not about how much protein per serving, it's about how much bioavailable protein (your body actually absorbs and uses) is consumed. When you eat raw egg whites only 50% of the protein is absorbed and used by your body vs over 90% when cooked. Those numbers are from a clinical study you can see HERE
